Kernel panic generally means damaged hardware or hardware
incompatibility - it's EXTREMELY unlikely that any of these encoder type
programs could cause the kernel to panic.. Like Lars said, it could be
power supply related (I've seen kernel panics from bad power), though my
first guess is always RAM. Especially in your case, since it seems to
happen consistently when you do something that is going to eat up some
RAM.
My suggestion: go download and run memtest.
