I still believe that your CPU shouldn't be 0% idle (maxed-out), even if you record 2 things @ the same time. Like I mentioned, my CPU is about 80-85% idle when recording 2 streams (bttv cards). My system specs and recording profiles are very similar to yours.

Sorry I can't be of more help, but maybe this will give you some point of reference WRT performance.
