Sound like a video output problem more than a video input problem.  Try using 
a different sync method or even deinterlacing.

If it is a video input problem, its likely due to high CPU load during 
capture.  Or interrupts conflicts.  Or DMA problems on the northbridge or 
hard drive.

Your much better off buying a PVR150.  They have better quality captures and 
very low CPU overhead.
