Yes for storage, not sure whether you can boot of this thing or not, which doesn't matter in your case.
LVM on top of software RAID is going to create high load, especially with multiple recordings on the PVR-500s.

I have to say that I love 3Ware, they by far and away make the best RAID cards on the market today. Phenomenal performance, well worth the extra few bob.
