The CPU requirements are ess than what you have.

I'm running an AMD duron 950 with 256 meg ram and dual pvr-250s. I can 
record 2 things and play a third at slightly stretched without an issue. 
The viewing can get a little jumpy if I use mythweb to check schedules, 
recorded show etc.

As another poster mentioned something is sucking down cpu cycles causing 
your problems.
