With the Plextor recording to mpeg4 and a recording profile that
encodes the audio to mp3 all you should have to do is run the nuv
through avidemux to change the container from .nuv to .avi.

The Plextor doesn't do hardware encoding of the audio, it outputs
uncompressed pcm data.      I believe the recording profile in Myth
will allow you to set it up to record and encode straight to mp3. 
Once that is done, the file should be all set, except it will be a
nuv, and not an avi..  avidemux will allow you to load the nuv file,
and then just check that the output format is set as avi, and then
save the file.  it won't reprocess the audio or video it will just
copy it to an avi container.  hopefully that will play on your device.
