You need to also enable "Enable auto-transcode" in each recording
schedule (I think it's under Post-processing). There is also an option
to configure the default auto-transcode setting for new recording
schedules.

Yes.

See above; the schedule needs to have auto-transcode enabled. You can
also configure the default value for new recording schedules.
