Sounds like you need to turn off your BIOS's "stop on" condition for the 
display or hook up a VGA null device in addition to the S-Video cable 
(which, incidentally, would probably mess up the NVIDIA driver's 
auto-output-configuration, so the first recommendation is probably more 
appropriate).
