The i945 in the mini is a bit of a pain to deal with. Older
drivers for it don't support arbitrary monitor resolutions and that
can be a problem with a widescreen panel.

I have my mini running an older version of Ubuntu 7.10 and
it's all good. It's a frontend only with the option to startup a
slave backend for transcoding.

Any of the current core duo minis should have more than
enough muscle for 720p TV.
