Thanks for the suggestions and links.  My biggest concern with the setup in
Mythtv is that there is something more to a dual DVI or VGA/DVI
configuration than a monitor and TV-out over S-Video.  Although I'm not
finding a lot of information on the subject, what I have read seems to
suggest that it is pretty straightforward.  My CPU definitely won't be an
issue.  If anything it will be overkill.
