If you are only doing SD then I suppose this may or may not warrant a
discussion. But if you are talking about HD then it is a mute point. S-Video
was designed for and can only do SD resolutions. Component supports HD
resolutions and thus is superior to S-Video in that regard. In my
understanding the ordering from worst to best in terms of quality would be:
composite -> S-Video -> component, DVI, or HDMI. The quality between the
latter three is more difficult to dinstinguish, because they are all good,
and your results will vary depending on your source, your display, etc. Also
DVI and HDMI are digital signals whereas the other three are analog signals.
Despite the popular belief digital isn't always better than analog. That is
why you are going get an "it depends" discussion on the virtues of component
vs HDMI.
