A bowtie is actually a two-dimensional version of a biconical antenna.  If
you imagine spinning the bowtie around its long axis you'll see that it
would form two cones with the feed at the apex.

Actual biconical antennas are pretty rare but you may have seen a discone
antenna, which is closely related.  They have wide bandwidth compared to a
dipole, which is important for TV because the UHF TV band is so huge.
