There's several ways.  If the two programs are on channels on the same
multiplex, then only a single real tuner is required (with additional
virtual tuners enabled).  If not, you'll need either multiple physical
cards or a card with multiple tuners.  The Nova-T 500 is a popular card
with dual tuners - there's quite a few others available though.

There's no real limits in MythTV to how many programs you can record at
the same time - providing you have enough tuners and fast enough disks!
