Ok folks, my debugging skills still need work. :-(
I continued having problems (albeit less frequently) up to the point I was sure it was the Revo that was defective. After wiping Mythbuntu 9.10 on it and installing the latest release candidate of Ubuntu 10.04, my networking problems seem to be gone... Left it running all night on my 100mbit switches with no connections lost. I put back my gbit switches and trying it now, so far so good. Could it be the network driver (forcedeth) that's been upgraded on 10.04? anyway, don't waste sleep over this (no answers received here so I guess it is not the case anyway), responding to myself so that I don't cause any confusion for others reading this in the future.
Daniel
