Hmm, a P2 is i686 so you should be fine -- I can't imagine that the
binary packages you received from apt-get being compiled for a CPU
newer than i686. However, they might have been compiled with certain
gcc flags that your CPU doesn't support, such as SSE. In that case you
either reconfigure apt-get to think it's on an i586 machine, or
compile your own code.
Unfortunately I can't answer your question about creating debs,
perhaps someone else will be along soon to help with that. I can't
help but wonder, though, if you can just skip the whole packaging
thing and simply do something like
./configure
make clean
make
make install
and Things Will Just Work (tm). However I've never really used
Debian/Ubuntu so I could be dead wrong...
