TTBOMK, they'll show either the callsign of the channel that now uses 
the old channel ID or they'll show #chanid# (such as #1021#) if there's 
no channel with that channel ID.

However, if that's really a concern, just hold off on changing things 
around.  There will be an update to mythconverg_restore.pl that does 
channel fixes for exactly this reason.  Even if you run -fixes, you'll 
be able to use the trunk version of mythconverg_restore.pl, so as soon 
as that's available, it will fix up all your channels for you (including 
xmltvid's, visibility, etc.) for the channels themselves and fix any old 
recordings or recording rules while it's at it.
