Touch screens are fairly rugged because you're expected to be tough with
them. If you're worried about getting the insides wet and shorting it,
remove the bezel, get a large, coarse aluminum heatsink from a surplus
industrial supply, and stick it to anything likely to get hot. Cut out
the back panel for the heatsink to stick through, and seal the whole
thing up with plumbers putty, or silicone, or caulk, or even hot glue.
Fanless, waterproof, and unless you're using something corrosive that
would etch the screen, safe for use in the kitchen.
