You can use MythTV to watch and record Foxtel Digital. Here are some pointers to get you started.

Capture
Video
You will need an analogue capture card. Your best option is a card that will accept S-Video input and connect that to the S-Video output of your Foxtel STU. Buy a SCART to S-Video adapter (around $15) and set the STU to output S-Video.
It is a good idea to buy a card that supports hardware MPEG encoding. This way, the CPU will not be occupied by transcoding and you can get by with a modest CPU (maybe even without a fan to keep the noise down).
I have heard of capture cards that will capture and encode high definition YUV component input, but unless you are willing to part with a couple of thousand dollars, it is probably not worth considering.
Audio
Just connect the stereo output on the STU (the same socket that is used for optical audio out) into the line-in on your sound card.
Remote Control
I use and recommend the Microsoft MCE Remote control. You will need to configure LIRC to use this.
Changing Channels on the STU
This is the best part. The Microsoft MCE IR receiver also has two IR blasters built in. You can configure them to automatically change channels on the Fox STU.
